how to make gluten-free stuffing

This week, in our kitchen, it has been Thanksgiving.

In the past few days, we roasted a turkey breast, made cranberry chutney, figured out to make great mashed potatoes without any dairy, conquered a big challenge (vegan pumpkin pie that tastes fantastic), and baked stuffing infused with rosemary, sage, and thyme. You'll see the results of all this, plus more, in the next two weeks.

We've also been giving thanks because Danny's parents, Jerry and Rosemary, came to visit us. They are a delight. Not much happened. That's the best kind of vacation. We sat around the dining room table, talking, and watching Lu play. And then Rosemary read books to Lu or taught her how to play Simon Says. Jerry helped her with Mr. Potato Head.

And in the midst of it, we shot this video for you: how to make gluten-free stuffing.

A few notes for you. Turn up the sound! We're still suffering from low sound on Danny's end of the camera. Luckily, we have ordered a microphone! It might be here in time for next week's video!

Danny likes stuffing to have large cubes of bread. You'll see that in the video. Me? I like smaller cubes. After eating this stuffing, which was delicious, Danny agrees with me. You don't want the taste of the bread to overwhelm everything else. Smaller cubes are better here.

The bread we used to make this stuffing is from a recipe in our cookbook. If you have been thinking about buying it, now is a good time.

Finally, we made this stuffing with 2 eggs and a half a pot of stock. Now, Danny would suggest you throw in another egg.

I LOVE Thanksgiving. We've been making it gluten and allergy-free for 6 years now. The best was the year I didn't roast the turkey 'til Friday and we had so much great food we didn't even miss it! Thanks for the stuffing recipe, though I can't do one with eggs. And I'm really curious about your dairy-free mashed potatoes. But gluten-free, vegan pumpkin pie...that's the Holy Grail! I can't wait!

Isn't it just the cat's meow that you can make an entirely gluten free and sometimes vegan Thanksgiving feast and have it be totally delicious and amazing?

Yay for stuffing! Do you have any good recipes for dairy-free green bean casserole?... I'm experimenting right now, and kinda sorta got it down, but if you have a tried and true recipe, that'd be fantabulous! (first ever gluten-free, dairy-free, sugar-free, oat-free and corn-free holiday season. It's a bit overwhelming..)

I love your blog. My daughter was recently diagnosed and I have been learning new ways to cook. Would love to make gluten-free stuffing this year. However, we also have nut allergies in our house. Any suggestions for substitutions in your bread recipe?

The pie reminded me I'd wanted to tell you that I successfully adapted my really good pumpkin bread pudding for my g-f daughter-in-law for last Thanksgiving. Just replaced the bread with store-bought gluten-free bread. I used my regular recipe, and just reduced the bread by one cup because it seemed drier and sucked up more liquid. (Same daughter-in-law I mentioned who liked your brownie recipe I posted.)

I'd be interested to know how you made your dairy-free mashed potatoes. I am not vegan, but I prefer to make mashed potatoes (or mashed sweet potatoes, or a mixture of the two) without dairy -- it's easy for something to taste good when it's all butter and cream, but that doesn't mean it tastes like what it is, if you know what I mean. I make them with olive oil and coconut milk, which I love, but perhaps you hit upon something even more interesting?

Will using an egg replacer totally ruin the stuffing? What about using a vegetable broth? (We have several "-frees" to work around, in addition to "gluten-free".)

@Wendy--The egg helps it stick together. This will be my first year making GF stuffing, but I've never bothered with egg in my vegetarian-but-wheaty stuffing. My bet is that you'd be OK just skipping it.

shouldn't need eggs for any stuffing. i've never used egg as a binder, gf or otherwise...never a difference.

I love that of all the expensive trendy kitchen implements out there, you are using a big ole Corelle mixing bowl just like my mom had when I was a kid. That's what makes the holidays special for me - pulling out the big heavy cast aluminum pan and whipping up a batch of fudge, or using my mom's mixing bowls to make the Christmas cookies. Good memories.
