Beef Bourguignon, marinated overnight.


Last night, he marinated the beef. This morning, he put this in the slow cooker. When we returned home this evening, the beef was so tender that it shuddered against the tongs.

Oh, this is going to be good for dinner tomorrow night.

Yum! What did the Chef marinade the beef in???...having trouble finding something GF...seems everything has gluten or MSG including Worcestershire, soy, salad dressings, etc. Please share, oh wise one.

Also, been wondering about something: 4 women on my street (about 30 houses) have been diagnosed with celiac recently. all similar age (30 - 40's), all with children. why now? coincidence? anyone know what triggers gluten-intolerance?

The meat sounds wonderful. I love slow cooking.

Stuffcookswant. That is very interesting about the diagnosis. I don't feel so good when I eat wheat myself. Perhaps, it's overkill. Overly processed foods without any fruits or vegetables to keep the body humming. I've started cooking more and more gluten free dishes, and am getting gluten free requests I didn't expect, fitting that demographic.

This site is a wonderful thing.

Stuffcookswant- I think maybe people are just more aware these days. So if someone is having GI problems their doctors test for it more often and I think Celiac is just more prevalent than anyone thought. That's just a guess. But when I was diagnosed 4 years ago I had no GI symptoms, just severe anemia. I worked with a woman who had Celiac and she insisted I ask the doctor to test for it. The doctor performing the endoscopy didn't think I had it but looked for it anyway. He was shocked to see I was off the charts.

But I digress, yes Shauna, I too would love to know what the chef used as a marinade. I am a new fan of the slow cooker. I made a sweet and sour pork dish the other day and it was so delicious. All you had to do was look at the pork and it fell apart. I could use a good slow cooker marinade for beef recipe.

That is quite curious that four of your neighbours have been diagnosed around the same time. But, I know at least for Canada they have said that 1 in 133 people have celiac disease and don't know it. I am sure this figure has changed by now, regardless that is still a heck of a lot of people.

I believe that the increase in diagnosis' is primarily caused by increased awareness. The exposure of celiac disease has come leaps and bounds since five years ago, let alone ten. However, more importantly doctors and those with celiac disease/gluten-intolerant (as well as their loving friends and family) have recognized that 'it' presents itself as a wide array of symptoms, which I know Shauna has discussed as well.

Also, childbirth is certainly an extremely stressful event for a woman's body, perhaps that has triggered symptoms in your neighbours? Stress and illness triggers or enhances weakness in the body.

Debbie, there are definitely a few GI specialists I'd like to shake right now... When I went in for my first endoscopy/colonscopy (yes 2.. 2 for the price of 1!!) all medical personnel present was convinced I had Crohn's, despite the fact that my mother also has Celiac disease. I am so happy that you were properly diagnosed!

I think nowadays we all need to take as much responsibility for our own health as possible. As a holistic doctor myself, I know enough to be dangerous LOL. But I often do diagnose myself and find little use for western doctors unless it's an acute condition. But even then one must be careful. I was hospitalized about 5 years ago because the doctor could not get any blood from my veins I was that anemic. The sent me to a well knowcn teaching hospital where they did an endoscopy, found nothing and sent me home. Next day I almost passed out and went back to another hospital where they found 6 bleeding ulcers.

When I hear of somene having GI difficulties I suggest they get tested for Celiac. Most of the time they do not have it but I figure it's better safe then sorry. I have no idea how long I had CEiac before I was diagnosed because I never had GI problems. And I think it probably took many years of malnutrition for the anemia to show up. I am so glad my co-worker suggested I ask the doctor to test for it. They originally thought it must have been my ulcers bleeding again.
