Today, the chef shows you how to blanch:
And since we're doing Danny videos today....
Quite awhile back, we talked here and on Twitter about some spring quinoa cakes Danny made at the restaurant. Well, he did a video with Good Bite about them and we'd love to share it with you now:
So go blanch some vegetables, then make spring quinoa cakes with them!
p.s. Someone wrote to ask if Danny had suggested adding matzoh to the quinoa. Nope! It's masa.

Great video to publish just in time for canning season.
We have a stainless steel stove top as well, and I find that Barkeeper's Friend is a great way to get it clean.
hmm, it looks like you have a scene in there twice! otherwise, excellent video as always and very instructive. :)
Andrea, great suggestion! Also, if we had a bit more time in the day, we'd clean the stove before the video! Next time.
Melissa, ay! thanks for alerting me to that. I edited out the second scene and reposted this. (Just so no one else thinks she's crazy.)
Thank you for sharing the blanching technique. This will be my first year canning the veggies in my garden and will need to do this regularly.
Great videos! When blanching peaches or other fruits, should the water also be salted?
I am so glad you are doing these videos!! I have never been much of a cook and truthfully, the more I learn about our food and the more I want to prepare fresh foods, I get really nervous thinking I won't be able to figure it out!! So thank you for posting these! :) I can't wait to watch them.
Also, I made a peach crisp from your recipe (back in '05) and it's just amazing!! I am trying to really limit my sugar, but I love baking for my family!! Now, the question is...how do I keep my hands away from it?? :)
Thank you so much for these videos! I am especially looking forward to one on braising. The words "braised pork shoulder" linger in my mind as one of the many foods you mention that I want to be able to create in my kitchen...but I haven't a clue how to braise :(

A wonderful video, as usual. I tried quinoa cakes a little while ago and it was such a mess. I ended up eating oily, burnt quinoa, partially in tears that night (it had been a long day).
This gives me the courage to try it again! Plus, I like the idea of baking them rather than trying to pan fry them in a lot of oil.
I think I'll make these for my brother in laws girlfriend when they come over. She has celiacs disease but doesn't eat accordingly AT ALL. She knows the risks, but she says she doesn't care.
They live in a really small town, which I think makes her feel as though she doesn't have options (the grocery stores there don't exactly carry quinoa). It really breaks my heart to know how bad she must feel, and yet, she isn't doing anything to change things.
I think she just doesn't know how to feed herself. I brought her my copy of your book this last weekend while we were visiting, and I have directed her to your site. All I can do now is to continue to talk to her, and show her how yummy gluten free living can be!
As a newbie G-F eater, this was my first recipe. The German & I cooked togeher (that's what I call MY hubby)& it ROCKED!
We love the video dirty stove & all b/c it made me feel like cooking with friends & less daunting to see 'normal' folks cook in their own kitchen. THX!
I love it when you guys do videos!! I want quinoa cakes now!!! :-) Thanks for sharing.
thanks for this post. a day or so later after i watched this, i went to whole foods. and i was so disappointed to see the limp "grilled" veggies in the case.

This space is like my kitchen, and Im inviting you in. If you would feel comfortable pointing your finger at me and shouting during a party in my kitchen, well, I'd ask you to leave. And then the rest of us would clear the air and go back to talking and laughing. The same is true here.
Now. Enough of that. Let's talk.
